This tuna stir fry contains an incredible combination of flavours and healthy ingredients with an added bonus that it’s super quick and easy to make. 1 package of penne pasta (300g)

1 can of tuna

2 tablespoons olive oil

1 medium onion (diced)

3 cloves of garlic (minced)

1/2 grated carrots

10 olives (cut in half)

1 cup shredded cheddar cheese

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon oregano or Italian seasoning

1 teaspoon red chilli flakes


In a pot, allow your water (according to pasta package directions) to reach a roaring boil. Add 1 tablespoon of salt to the water. Stir in your dried pasta and allow to cook for 7-8 minutes on medium heat. Drain and return to pot.

Meanwhile, in a large skillet heat 2 tablespoons of the oil over medium heat. Add onion, garlic and red chilli flakes and cook for 1 minute.

Add your tuna, carrots, salt and black pepper and saute for 3 minutes.

Stir in your cooked pasta with tuna and vegetables. Toss in your chopped olives and Italian seasoning and cook for another 2 minutes.

Lastly, mix in your shredded cheese, cook for 1 minute and remove pasta off the heat.

Plate, serve and enjoy!
